Despite Apple's rigid compatibility considerations, a major OS update like this one still tends to cause issues in various apps. If you're travelling, or about to do something important involving your apps, you don't want to risk it.
Let the crowd take the first dip so they can point out the problems. The developers can then address the issues through an incremental update. Majority of the apps do release compatible versions immediately, but others take time – especially if the bugs require major troubleshooting.
